Gluten Free Chocolate Brownie

  • 2 cups caster sugar
  • 1/2 cup gluten free plain flour
  • 1/2 cup dark choc chips
  • 1/2 cup cocoa powder
  • 1 cup rice bran oil
  • 4 eggs
  • 1 tsp vanilla extract

Preheat the oven to 195C or 175C if fan-forced. Line a 20x30cm tray with baking paper. Combine sugar, flour, choc bits and cocoa in a bowl. Add the oil, lightly beaten eggs and vanilla. Stir until combined. Pour into prepared tray. Bake for 30 minutes.

Tip: try adding walnuts or macadamia nuts to maximise the heavenly nature of this tasty goodness.
